Easter is almost here!!! I know you guys all love a delicious ham dinner and maybe you are asking "What would be the perfect side dish?" You have come to the right place because we have a super easy recipe for Fresh Cheesy Scalloped Potatoes, which happens to be the PERFECT Easter side dish! It is my brother and my favorite. The best part is, it's made of FRESH ingredients, not out of a box. Hope you try it!
|The key ingredients|
|Peel and thinly slice 5 Russett Potatoes, and place in a saucepan|
|Add cream or half&half, salt, pepper, garlic, nutmeg, and simmer on stovetop 'til potatoes get tender. DO NOT BOIL!|
|Transfer to a casserole dish|
|Top with your favorite cheese. We used a sharp white cheddar, and...|
|a mild yellow cheddar. Bake in a 350 degree oven for 1 hour to 1 hour 20 min.|

Here's the recipe:
~5 medium russet potatoes, peeled and thinly sliced, about 1/4 to 1/2 inch thick
~2 cups heavy cream (I used this) or half and half or 1 cup of milk and 1 cup of cream
~Kosher salt (or garlic salt) and black pepper, to taste
~A sprinkling of nutmeg
~1 1/2-2 tsp crushed garlic
~2 cups cheddar, grated (once we used 1 cup cheddar, one cup grated gouda--YUM). You can vary the type of cheeses here...just use 2 cups!
1.Preheat your oven to 350°.
2.To speed up the baking time, preheat the potatoes and cream mixture: Put the sliced potatoes into a large saucepan with the salt, pepper, nutmeg, garlic and cream. Toss gently to coat evenly. Bring to a simmer for just a few minutes. Once the potatoes are heated through they are ready for the oven.
3.Pour the steaming hot potatoes into a pretty oven- proof casserole dish. Sprinkle the top with the grated cheese. Bake uncovered for 1 hour to 1 hour 20 min, checking after 1 hour. The potatoes will be tender and the cheese bubbling and golden.
