Happy Cinco de Mayo!!



Hey there! Hope you're having a great Cinco de Mayo!  To make it even better, make sure to grill up some beef fajita meat and make fajitas, tacos, nachos, or like we do, serve it inside some quesadillas with a quick side salad.  Of course, my mom likes to whip up a margarita to go with hers! Salud!

Bellas Beef Fajita Marinade:

One 2lb skirt steak
1/2 cup olive oil
1/3 cup soy sauce
2 large cloves garlic, minced
1/4 cup lime juice

Whisk all ingredients except the steak in a small bowl. Place steak in 1 gallon freezer bag, and pour marinade in. Close bag tightly and swish the marinade over the steak inside the bag (cool, huh?).  Let marinate in the fridge for at least an hour (but the longer the more intense the flavors).

Get your condiments ready:  tomatoes, avocado, lettuce, cilantro tortillas (ours are flour tortillas that you buy raw  at Costco and cook up fresh in the frying pan, and they are sooo delish! )

Fire up the grill or the Foreman Grill and take your meat out and grill to your liking  (we like medium-ish).  Cut it up into strips or cubes and ENJOY!!

  1. MMM!! Bella, I missed this when you first post. Wow, this is absolutely my kind of dish. We have something kind of like it and my kids love all of the flavors, I'm thinking they will like this one too. Wonderful post!!
