Tonight we had a Chinese dinner that was both healthy AND the most delicious ginger chicken ever! A tasty mix of vegetables such as asparagus and carrots with a gingery chicken that has a small kick all on a layer of rice. I think you'll like it even more than take-out Chinese food!!! I know I did. :)

Ginger Chicken Delight
6 boned and skinned chicken thighs (about 1 1/4 lbs)
1/3 Cup Flour
1Tbsp. Vegetable Oil
1/2 Cup fruit juice. You can use orange, apple or pineapple
2 Tbsp honey
2Tbsp soy sauce
1 Tbsp. grated fresh gingerroot
2 Tbsp. crushed garlic
1. Put flour in a large ziplock bag, shake chicken pieces, one or two at a time in the bag of flour to coat.
2. Heat oil in large nonstick skillet over medium-high heat. Cook chicken 3-5 min per side, until lightly browned outside, but slightly pink in the centers.
3. While chicken browns, mix juice, honey, soy sauce, ginger and garlic. Once chicken is browned, pour the juice mixture over the chicken in the pan. Cook, turning, for a few more minutes, until chicken is no longer pink in the middle and sauce thickens slightly. If sauce has become too thick, stir in up to 1/4 cup water to thin it out.
Serve over white rice with oriental veggies (I use frozen asparagus stir fry)
Try it next time you want Chinese. It serves 4, at under 300 calories/serving.
