Mom's Chinese Chicken






Tonight we had a Chinese dinner that was both healthy AND the most delicious ginger chicken ever! A tasty mix of vegetables such as asparagus and carrots  with a gingery chicken that has a small kick all on a layer of rice. I think you'll like it even more than take-out Chinese food!!! I know I  did. :)

MOM's NOTE: This recipe is a household favorite that I have been making for years! I found this recipe in a Women's Day or Family Circle Magazine.   Tasty, Healthy, Quick and Economical.  LOVE IT!  So here's the recipe.  Try it, and you'll want to make it again, soon!

Ginger Chicken Delight

6 boned and skinned chicken thighs (about 1 1/4 lbs)
1/3 Cup Flour
1Tbsp. Vegetable Oil
1/2 Cup fruit juice.  You can use orange, apple or pineapple
2 Tbsp honey
2Tbsp soy sauce
1 Tbsp. grated fresh gingerroot
2 Tbsp. crushed garlic

1. Put flour in a large ziplock bag, shake chicken pieces, one or two at a time in the bag of flour to coat.
2. Heat oil in large nonstick skillet over medium-high heat.  Cook chicken 3-5 min per side, until lightly browned outside, but slightly pink in the centers.
3. While chicken browns, mix juice, honey, soy sauce, ginger and garlic.  Once chicken is browned, pour the juice mixture over the chicken in the pan.  Cook, turning, for a few more minutes, until chicken is no longer pink in the middle and sauce thickens slightly.  If sauce has become too thick, stir in up to 1/4 cup water to thin it out.

Serve over white rice with oriental veggies (I use frozen asparagus stir fry)

Try it next time you want Chinese.  It serves 4, at under 300 calories/serving.

Hello Cupcake!!

Well don't these cupcakes look delicious! A devils food cupcake with cream cheese frosting always makes a tasty dessert. But there's a twist to these, these are MINI!! You can make your own mini cupcakes too using the original cupcake baker! They cook bite-size cupcakes within 5 minutes with no mess. You can buy cake mix, make the batter, and pour it into the baker.  This recipe deserves the BELLA THUMBS UP!!! I encourage all of you to try this awesome gadget that will give you cupcakes in a blink of an eye. Perfect if your having a party and need some quick simple snacks.

MOM'S NOTE:  This gadget is a fun way to make cupcakes and muffins without turning on the oven, which can be important where we live.  You can make small batches if you just want a few, or in about an hour, you can have about 50 of them, filling your kitchen counters!  Isabella made the cupcakes on her own, and found the baker fun and easy to use.  Of course, it gets hot, so kids need to use caution when handling the baker, and have an adult's supervision, especially when removing the muffins after baking.  If you want one of your very own, you can order one here:
