Bits and Pieces of the Week

We went to San Tan Flats for my moms birthday and made these delicious chocolate cupcakes with shredded coconut on top. YUM!

The next day, we went to a fun Birthday Party for our friends Christopher and Nicole, and they had a petting zoo there--COOL!

Just to let you know, this is where beef & chicken really come from!

We were in the mood for strawberry shortcakes so that is exactly what we made. First, you have a small angel food cake, add chopped up strawberries, drizzle syrup, add whipped cream and you are good to go!

Girl Scout Sundaes!

Wondering what to do with all those leftover girl scout cookies? As a Girl Scout myself, there are a few tricks up my sleeve. Aha! Here is a solution! You can make the Girl Scout Sundae. We were coming home from Religious Education when I decided to make an ice cream sundae and came up with the idea of ice cream and a Girl Scout cookie and... Voila!

vanilla ice-cream
3 girl scout cookies (any type you'd like)
chocolate sauce
whipped cream
1 Ziplock bag
rolling pin

1. Put 1 cookie into the ziplock bag.
2. Use the rolling pin and roll it over the cookie in the bag until very crumbly.
3.Scoop 2 scoops of ice-cream into the bowl.
4. Sprinkle cookie crumbles on top of ice cream
5. Stick 2 cookies into ice cream mounds
6.Drizzle with chocolate sauce
7. Top with whipped cream

That's how I assembled mine, but please feel free to get creative, and ENJOY!

I LOVE CATS! This video is so hilarious!

Snickerdoodle Blondies

HEY! Welcome to Bellabits! This is Bella with my very first recipe... Snickerdoodle Blondies! My mom and I thought of starting a food blog and we thought we'd try this recipe from My Baking Addiction as our first. It was a very good one indeed. Here's how to make them:

2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon grated or ground nutmeg
1 teaspoon salt
2 cups packed brown sugar
1 cup butter, room temperature
2 eggs, at room temperature
1 tablespoon vanilla extract
2 tablespoons granulated sugar
2 teaspoons cinnamon
a pinch nutmeg

1. Preheat oven to 350 degrees F. Lightly grease and/or line a 9×13 inch pan. Combine the flour, baking powder, cinnamon, nutmeg and salt and set aside.
2. In large bowl, beat together butter and brown sugar for 3-5 minutes. Add in the eggs one at a time, then the vanilla, and beat until smooth.
3. Stir in the flour mixture until well blended. Spread evenly in prepared pan (mixture will be somewhat cookiebatter-ish, so it’s best to spread it out with a greased spatula or your hands). Combine the granulated sugar, cinnamon, and nutmeg in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.
4. Bake 25-30 minutes or until surface springs back when gently pressed. Cool before cutting. Makes 20-24 bars.

Well, I hope you enjoyed it! I know I did. We ate every last crumb before the second day. Visit us next time on Bellabits.
